GINGER CARROT TURMERIC SOUP

This recipe is so bomb, guys!

The Hubs has been feeling a bit under the weather this week, which sucks, but I have to admit gave me an excuse to step up my soup making skills. This vegan soup is filled with yummy ingredients to help boost up that immune system and fight this cold.
Here it goes,
Ingredients – 1 tablespoon olive oil ( if you want it vegan) or 1 tablespoon of butter (or both mmm I don’t judge) – 1 diced yellow onion – 1-inch ginger root (measuring ginger sucks so just eyeball it, follow your heart and be sure to grate it)- 2 medium cloves of garlic (grated) – 7 large carrots (peeled and cut into 3 equal pieces.) – 2 cups of vegetable broth – 1 teaspoon ground turmeric- 1 teaspoon ground pepper- if you like a little spice add some chili flakes

Instructions – After you cut and peel your carrots boil them in a pot. – In a separate pot add your olive oil/ butter and warm up the pan. – Add your chopped onions and cook until they’re soft and transparent. – Add ginger and garlic. – Add vegetable broth, turmeric, pepper, and chili flakes (optional). – Drain your carrots and puree them then add to pan with other ingredients. – Serve with a dash of ground cinnamon on top of every bowl (optional, but you should totally do it.)

There you have it super easy to make and incredibly delicious ginger carrot soup.
