Vegan cranberry ciabatta stuffing

This vegan cranberry stuffing is so flavorful and delicious everyone will love it!
 
Being mindful of all of your guests’ dietary needs is something I’m always sure to do. Adding vegan dishes here and there just makes room for everyone to enjoy the thanksgiving staples without having to make multiple versions.
 
Ingredients:
1 Lbs Ciabatta bread ( day old chopped into medium pieces) 
6 Tbsp avocado oil 
1 Tbsp butter ( or vegan butter)
2 Large onions (diced) 
3 Celery stalks (finely chopped)
2 Tbsp thyme (fresh) 
3 garlic cloves (minced) 
4.5 oz Roasted chestnut (chopped and peeled)
1 Cup veggie broth
Salt & pepper to taste 
1.5 Cups fresh cranberries 
* vegetarian option- add 2 eggs to the mix & top with fresh parmesan. 
 
What to do: 
+ Preheat oven to 350 degrees F. 
+ Line your glass baking dish with butter of your choice. 
+ Add olive oil and butter to a large skillet and sauté onions half way through- or until fragrant.
+ Toss in the celery, thyme, chestnuts and sauté for a few minutes.
+ Transfer to a large bowl, toss in ciabatta, cranberry and add broth.
+ Then add to a backing dish (cover with foil) and cook for 30 minutes. Uncover and stick under the broiler to get an extra golden crust.
